Este trabajo analiza el origen y desarrollo de la plantación de olivos y de la producción de aceite en el Alto Guadalquivir a través del análisis de los vestigios del antiguo municipio romano de Aurgi (Jaén), entre los siglos I a.C. y I. De esta forma, nos adentramos en el proceso histórico que dio lugar a un paisaje agrario dominado por el olivar y la actividad económica que generó este cultivo. Ahora bien, este estudio no solo profundiza en las realidades económicas, sociales y políticas que facilitaron la aparición de una agricultura especializada, sino también en los cambios culturales que llevaron al consumo de un alimento básico en la dieta mediterránea. The present work analyzes the origin and development of the olive plantation and oil production in Alto Guadalquivir through the analysis of the vestiges of the ancient Roman municipality of Aurgi (Jaén), between the 1st century B.C. and 1st century. In this way, we delve into the historical process that gave rise to an agricultural landscape dominated by olive groves and to the economic activity that this crop generated. Meanwhile, this study not only looks into the economic, social and political realities that facilitated the emergence of a specialized agriculture, but also examines the cultural changes that led to the consumption of a staple food in the Mediterranean diet.
